Gazpacho and basil icecream


Beautiful summer dish

Ingredients for the soup: 10 Tomatoes (no skin, no seeds), 4 gloves of garlic, 1 loaf of white bread (no crust), cumin powder, allspice powder, olive oil and wine vinegar.

Ingredients for the ice-cream: Milk or cream (1 cup), (sugar 1/2 cup) and basil leaves


How to cook the gazpacho:

Put all ingredients in a bowl except the olive oil and vinegar and mix in blender. Slowly add the olive oil. Add vinegar.

Chill in fridge for at least two hours


How to cook the ice cream:

Put basil leaves and sugar in blender, slowly add milk or cream

Put in freezer and stir every half an hour for the first few hours. Leave in freezer over night.

Poor the gazpacho in plate or glas and add one scoop of basil ice-cream.
