Lamb and herb salad


Lovely Ottolenghi recipe



4 Lamb Cutlets, thyme, rosemary, 2 gloves of chopped garlic, olive oil

Sauce: orange juice, red wine vinegar, honey, star anis, cinnamon stick

Salad: roasted wallnuts, crumbled goat cheese, mint leaves, flat parsley leaves, fresh figs cut in four


How to cook:

Marinate lamb in thyme, rosemary, garlic and olive oil for a few hours

Put all ingredients for sauce in pan and simmer for for 20 – 30 minutes

Toss all ingredients for salad together

Grill lamb on both sides for 3 minutes

Serve salad and lamb with sauce.
