Ingredients: Eggplant, tomatoes, zucchini, minced meat (preferable lamb), fresh herbs; rosemary, basil or thyme and garlic
How to cook:
Cut all veggies in cubes of about two centimetre.
Put meat in skillet and add veggies and herbs.
Cook until eggplant is turning brownish
I love to additionally melt cheese on top of the dish. My favourite is Napoli Contadino.
